A Healthy Twist to Chinese Food.

First off, if you have never had Tofu, don't knock it until you try it! If you don't like it the first time, then cook it a different way. Tofu is not my favorite if it's mushy and in miso soup. I like to get the extra firm Tofu and sauté the crap out of it! To the point it has a crisp to it. Also, you probably couldn't tell, but that's not rice. That's right, it's cauliflower! With that being said, here is the recipe I used to make this healthy version of Chinese food. Enjoy!

Ingredients

Serves 4

2 Packs of frozen cauliflower rice

1 Pack of frozen peas and carrots

3 Egg Whites

1 pack of Extra Firm Tofu

1 Tbsp. oil or butter (I used coconut oil)

2 Tbsp. Low Sodium Soy Sauce

General Tso's Sauce (any sauce of your choice)

Salt, garlic powder to taste

Cut the Tofu into cubes and marinate in Sauce of Choice. I let it marinate for about 10 minutes while I started on the fried cauliflower rice. In a pan, add oil or butter, and sauté cauliflower rice, peas and carrots until tender, add egg whites. Then add salt, garlic powder, and soy sauce. You can add more if that tastes better to you. Set aside. In another pan, add oil, and sauté marinated Tofu until it's at the crispness you like. You can either mix it in the cauliflower rice or place on top. Wah la, your done!
